Wine Review December 4, 2011 – Calamus 2008 Cosmic Red – Cave Spring 2009 Chardonnay

Calamus 2008 Cosmic Red – VINTAGES 258129 – $17.95 –  Calamus has once again created an excellent Red Blend.  Typical of the other 2008 Cabernets I have reviewed this is a very fruit forward wine.  But as with any of the wines I highly recommend this is all about balance.  What I mean by this is that while there is a strong pressence of Blackberry, Plum, and Currant hidden underneath is Vanilla with a slight oaky finish.  I had a chance to try this at Wrapped up in the Valley served with a Moroccan Lamb Stew, but this would pair perfectly with a Roast Beef au Jus. 

Cave Spring 2009 Chardonnay – LCBO 228551 – $14.95 – This is a very fun Chardonnay as it is a blend of a lot of what I have really enjoyed this past year searching for the perfect Chardonnay.  It is a blend of regular Chardonnay and Chardonnay Musqué… it is also a blend of unoaked with a little bit of oaked.  Unlike many of the other unoaked Chardonnay’s I have reviewed this one is very dry.  WIth the absense of any sweetness on this wine the aroma is typical of Musqué as it is like a tropical fruit salad.  The flavours on this wine a crisp clean with a nice finish.
