Wine Review December 23, 2012 – 2007 Henry of Pelham Carte Blanche – Cave Spring Cellars Blanc de Blancs

It’s Christmas and New Years is just around the corner.  This is the only time of year I get really excited for Sparkling wine.  This year I have come across a couple of Sparkling Wines that really stand out.  The prices are a little higher than what I usually recommend but this is the time of year when it’s time to pull out all the stops.  Both wines this week are Blanc de Blancs, which means they are made up completely of Chardonnay.  Champagne is made of a blend of Chardonnay and Pinot Noir.  These two are my favorite Sparkling Wines that I have tried this year in Ontario. 

Henry of Pelham Cuvée Catharine Carte Blanche Blanc de Blanc 2007 – Vintages 315200 – $44.95 – Please don’t stop reading!  I know the price is a little steep… this is the most expensive wine that I have recommended but it’s Christmas!  This is a wine that is dressed to impress, right from a very sharp label that looks very french.  Very crisp on the finish and aromas of Hay and Bread. 

Cave Spring Cellars Blanc De Blancs – LCBO 213983 – $29.95 – Very Dry with flavours that lean more towards Apple (whereas the Henry of Pelham is more towards Citrus) with a nice Crisp Acidity on the finish. 

The thing about both of these sparkling wines is with the nice crisp acidity they will match perfect with your turkey dinner and mashed potatoes.  But if you want to take it up a notch pair these with seafood… maybe some oysters or lobster.
