2012 Domaine de Valcolombe Cuvée Baroque – Price and Availability TBD – ****+ – This wine is a blend of Cabernet Sauvignon, Merlot and Syrah. Flavours of Cassis, Blackberry, Plum with Cedar notes that bring up the finish. This bottle does need an hour in a decanter but the firm tannin does soften quickly. As the wine opens up you get nice pepper that rises to the roof of your mouth on the finish. The deeper you get in the bottle the more you notice the pepper finish from the Syrah. This will make a unique and interesting addition to your cellar and should age for 5-10 years. Pair with grilled Beef, or Lamb.
