2012 Hinterland Les Étoiles – $39.00 – Winery Only – ****1/2 – This is not going to last at the winery for long. Before reading this review any further go onto the Hinterland website (http://www.hinterlandwine.com/) and order a few bottles of this. Simply put this is the best vintage of Les Étoiles I have tasted to date. Previous vintages were wines that were well crafted and assembled but needed a bit of time to settle down in the bottle. This is going to be a hard wine to age in my cellar simply because it’s drinking so good right now. The nose is Apple, Lemon, Subtle Vanilla and Bread notes. It was difficult to resist the urge to gulp this wine back. Everything was in perfect balance in this wine. The fruit Apple, Pear and Lemon flavours make way to a nice creamy texture and hints of vanilla and yeast that start to rise to the roof of your mouth on the finish and then the beautiful acidity and bubbles wash everything away. The finish lingers but as a whisper of what was just in your mouth … basically take another sip to make sure it tasted as good as the last. Drink this now or wait for 5-7 years.
