2012 Chateau des Charmes Blanc de Blancs – $28.95 – ****+ – Blanc de Blancs means that this bubbly is made with only Chardonnay. This style of Sparkling is quickly becoming my favorite in the province. The nose on this wine is creamy vanilla, citrus and fresh baked bread. This wine is rich and full in the mouth. The vanilla notes rill your whole mouth while the citrus and apple notes dance on your tongue. The acidity is crisp clean and refreshing but those vanilla notes just linger for a littler while longer. I enjoyed this wine as part of my New Years celebration this year, and I will be using this wine to celebrate other occasions throughout this year… Even if the occasion is to open a bottle of this Blanc de Blancs.
